Marco Polato - Restaurant Manager

Venice-born Marco Polato pursued his passion for hospitality from a young age, achieving a Bachelor’s Degree in Hospitality Management before beginning his career at The Gritti Palace Hotel. There he became Assistant Restaurant Manager after 4 years, before moving to Florence to become Restaurant Manager of a renowned rooftop venue at The Westin Excelsior Hotel.
Marco completed the “Starwood management Training Program” in Shenzhen, China where he honed his management skills at multiple food and beverage outlets before London beckoned with a role at the renowned Marriott Hotel. 2016 took him to Vietnam where he oversaw multiple dining venues in the most exclusive part of Ho Chi Minh City.

Marco brings his extensive hospitality management skills to Anantara Siam Bangkok where he oversees Biscotti with dedication and charm.

Andrea Buson - Head Chef

Italian native Andrea studied classical and modern cooking techniques at “Pietro D’Abano” Hotel and Restaurant Management School. He began his career in Padova, Italy working at top international hotels before joining the Elite Don Pablo Hotel and Resort in Torremolinos, Spain. In 2009 he became Chef de Cuisine at the Diamond Beach Resort in Sharm el Sheik, Egypt.

After moving to South East Asia, he joined the Portofino Restaurant at The Venetian Macao Hotel and Resort, then named Best Luxury Resort in the world. Chef Andrea then travelled to Lao where he successfully opened the first authentic fine dining Italian restaurant in Luang Prabang, a UNESCO World Heritage site. After that, he opened the iconic “The Terrace” Italian restaurant at The Danna Langkawi in Malaysia, an award-winning luxury hotel in Langkawi.
